The last country on our trip around the world was Poland, which is where Darlene’s family is from. Darlene grew up eating Polish food, and we were absolutely blown away by the amazing vegan restaurants and food we found in Krakow and Warsaw.
After taking cooking classes in Bali, Thailand, and Vietnam, we decided to end our three months abroad with one final vegan cooking class…in Poland! As a first generation Pole, Darlene grew up eating and helping her mom make traditional Polish foods, so we were really excited about joining the crew at Polish Your Cooking for their Sunday class!

We only spent about 12 days in Italy, but we managed to visit four different cities including Rome, Florence, Pisa, and Milan, and along the way we discovered what vegan Italian food is all about! Here’s a taste…
After a very full week traveling through Italy last week we had one final stop in Milan this week before flying to Krakow, Poland. From there we bounced back and forth between the city and the small towns where Darlene’s family lives. Oh, and we finally felt the baby kick!
Our tenth week of traveling began our European adventures and was split between Rome and Florence with a day trip to Pisa to end the week. Since leaving Asian the amount of things that changed literally overnight was unbelievable…the weather, the food, the architecture, and of course the prices!
We had so much fun hanging out and training at CrossFit Ten500 last week! It’s the best CrossFit gym in Bangkok, and everyone there was super cool. We met people from more than a dozen countries that were brought together through fitness, and to top it off, the manager Rose is vegan!
This week we found ourselves in the capital of Thailand—Bangkok. With a population of more than 6.3 million people, it is by far the largest city we’ve been to. We skipped the tourist attractions and focused on getting a feel for the local city lifestyle, working out, and connecting with people.
After spending the last week in Chiang Mai, this week we took a bus about three hours north to Chiang Rai, Thailand…easy to get confused, we know! We explored a crazy temple and a few waterfalls, and got a ticket on the motorbike!
